One of the reasons the festival is set at the beginning of the spring is because the qvevri vessels are ready to be unsealed. These are vessels used since ancient times in Georgia, to prepare wine through the fermentation process of grapes in a natural manner. After the grapes have been harvested and pressed, the resulted juice is placed in these qvevri vessels, which can be quite large, and buried in the ground for months. The fermentation period depends on the type of grapes, ranging from 4 months to 6 or even 8 months in some cases. So, the coming of the warm season means that most qvevris are ready to be opened, in order to enjoy the wine that reached its maturity. So, you’d want to be there, to be able to take a sip from this amazing liquid after these vessels will be unsealed and the wine will be able to breathe for the first time.
There will be too many wine assortments, which are produced in Georgia alone, at this festival. Besides wine, the festival attendees will enjoy barbecues and fresh bread, all prepared in a traditional Georgian manner, because you’ll have to eat something to stay sober throughout the entire festival, if you want to taste several types of wine. Since 2010, when the festival debuted with only 15 wineries present, the even evolved in a great deal, 2016 managing to gather no less than 200 wineries of all sizes and categories.
